Preheat oven to 350. Butter and flour a 9″ round cake pan.
Beat eggs and sugar until pale and fluffy.
Slowly stream olive oil and lemon juice into the egg and sugar mixture and fold with a rubber spatula.
In a separate bowl, whisk flour, baking powder, salt and zest.
Gently fold dry ingredients into wet ingredients.
Pour batter into prepared pan and bake for 45 minutes.
Let cake cool in pan slightly before inverting onto a cake plate and dusting with powdered sugar.
